Mr. Yamamoto said that bread is both a tool and a weapon to connect with people.

When being a student, he jokingly told a friend, If I become a baker, I can eat bread every day! , which became a dream of him in the end.

The bakery opened in 2015.

While training away from Higashi-Hiroshima, he realized goodness of his hometown again and developed a desire to bring delicious bread to local people.

The bakery has become a part of local community with its delicious French bread that is rarely seen in Japan.

It took 19 years from the time he started his training to have his own bakery, and he moved from place to place, feeling the gap between his ideal and what he envisioned.

Sometimes being suffered from ill and stayed a hospital.

The various hardships and encounters with people have strengthened his passion for bread.

There were times when he struggled to find his own identity.

"However, it came into a conclusion that what comes from interacting with the local people is only one that t I can make."

Since then, he has been making an effort to participate in communities and make connections.

Now, being particular about baking bread with vegetables from local farmers.

In MICHISHIRUBE, he is now planning "food" experiences that make use of local ingredients, as well as bread-making classes to go with dishes!
